Patatas Bravas is a traditional Spanish tapas dish that everyone loves.

The first time we ever tried this dish, it was actually served to us in a Spanish restaurant by mistake! Ever since then, we have been trying to find the perfect recipe for making it at home. The sauce is what makes this dish, as well as cooking the potatoes perfectly.

In this recipe, potatoes are cooked three ways, first boiled then fried then baked. This gives them a perfect crispy on the outside and soft on the inside texture and a golden brown color.



  • Olive oil
  • 1 shallot, diced
  • 2 garlic cloves, finely minced
  • 1 tbsp. of Spanish smoked paprika
  • 1 firm plum tomato, roasted in the oven
  • 1 cup of mayonnaise
  • Tabasco sauce
  • Sherry vinegar
  • Pinch of tomato paste for color
  • Salt and Pepper, to taste


  • 4 Russet Potatoes
  • 1 cup of Olive Oil
  • Salt and Pepper, to taste

Making the sauce

Step 1: Heat the oven to 400⁰F

Step 2: Heat the olive oil in a small saucepan and sauté the shallots and garlic on medium-low heat for 5 minutes. Once the shallots and garlic are translucent, add the smoked paprika, stir everything together for 30 seconds, and remove from heat. Let it sit and cool down.

Step 3: When the oven is warmed up, cut the plum tomato in half and roast until soft, about 5-7 minutes. When roasted, remove the skin of the tomato and let it cool down for a little bit.

Step 4: Combine all the sauce ingredients, shallots, garlic, tomato, mayonnaise, Tabasco cause, sherry vinegar, salt, pepper, and little bit of tomato paste and blend in a food processor.

Step 5: Let it cool in the fridge for at least 30 min.

Making the Potatoes

Step 1: Wash the potatoes and boil them for 5-7 minutes. Once they are cool enough, peel the potatoes and cut them into 1″ pieces.

Step 2: Meanwhile, heat the olive oil in a 2.5-quart saucepan on high heat. Fry the potatoes in batches so that they are all in a single layer for about 10 minutes or until they start turning golden brown.

Step 3: Prepare a bowl lined with paper towels to transfer each batch to after it’s been fried. Add plenty of salt and pepper to each batch once in the bowl.

Step 4: While the potatoes are frying, set the baking sheet in the hot oven and let it warm up. Once all the potatoes are fried, transfer them carefully to the baking sheet and bake for 10 minutes.

Step 5: Serve in a bowl with the sauce drizzled over the potatoes and extra on the side.
