This dish is traditionally cooked on the roadside “dhabas” in big tawas. A tawa is a flat or concave disc-shaped frying pan or griddle. You do not necessarily need a tawa to cook this dish, we make it in a large stainless steel skillet. This particular recipe is prepared in two stages, first marinating chicken in the “masala” and then quickly cooking it. It is perfect with fresh naan or roti, a little bit of yogurt, and mint chutney.

  • 1.5 lb. boneless and skinless chicken breast or thighs
  • 2 tbsp garlic paste
  • 1 tbsp vinegar
  • salt and pepper
  • 1 cup of yogurt
  • 1/2 cup of heavy cream
  • 1 tsp chaat masala
  • 1 tsp Kashmiri chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin
  • 1 tsp kasoori methi
  • 1 tsp garam masala


  • 3 tbsp Ghee
  • Marinated chicken
  • 2 Serrano peppers
  • 1 lemon, sliced in wedges
  • 1-inch ginger, sliced into tiny strips
  • 1/2 tsp garam masala
  • 1 tsp kasoori methi
  • 1 tbsp fresh mint leaves, chopped
  • 1 tbsp fresh cilantro, chopped

Step 1: Cut the chicken into smaller pieces or cut deep slits into the chicken. In a non-metallic bowl combine all the ingredients, except chicken, for the masala and whisk together. Save half of the masala in a separate container, and add chicken to the other half. Cover and refrigerate for at least an hour.

TIP: While waiting for chicken to marinate chop up all the vegetables and measure out all the spices for when it is the time to cook.

Step 2: Set a frying pan on medium-high, add ghee. Once the ghee is melted cook the marinated chicken for 4-5 minutes on each side until the chicken is cooked enough and you can pull the pieces apart. As it is cooking roughly try to shred the chicken.

Step 3: Add the serrano peppers, lemon wedges and ginger to the pan and continue to cook for about 10 minutes, the entire time stirring and pulling the chicken apart.

Step 4: Add the saved masala and cook for 6-8 minutes. Continue to pull the chicken apart as it is cooking until it is completely shredded.

Step 5: Remove lemon skins, add garam masala and kasoori methi and cook for 1 minute while stirring, to blend all the flavors.

Step 6: Turn the heat off, sprinkle with mint and cilantro and serve with hot naan bread.
