Tabbouleh salad is perfect as a dish on its own or as a side dish to fish tagine, falafel, or any Mediterranean dish for that matter. It is light and refreshing, but very flavorful. It is also a great way to use up that parsley that’s been sitting in the back of the fridge, or grains, mainly bulgur, from the pantry.

Unlike most other salads, tabbouleh refrigerates very well, for up to 3-4 days.

Ingredients:

  • 1 cup Bulgur
  • 1 cup boiling water
  • 3 cups of Parsley
  • 1/4 cup mint, finely chopped
  • 2 tbsp scallions, can be substituted with red onions, finely chopped
  • 2 plum tomatoes, seeded and diced
  • 1 small cucumber, seeded and diced
  • salt and pepper to taste
  • 4 tbsp lemon juice
  • 3 tbsp olive oil



Step 1: Combine bulgur and boiling water and let soak for 1 hour. Drain well and squeeze out any excess water.

Step 2: In a large bowl, combine drained bulgur, parsley, mint, scallions, tomatoes, cucumber, salt, black pepper and lemon juice. Chill in the refrigerator for 1 hour.

Step 3: Right before serving, add olive oil and toss well. Sample a small amount and add additional seasoning if needed.
