This is an easy, quick and simply delicious recipe for green beans with garlic and lemon.
In less than 20 minutes, you will have a perfect healthy side dish for any meal that will leave your guests asking for seconds and the recipe! This recipe calls for blanching the green beans followed by chilling them in ice water which is the secret for locking in that bright green color.
- 2 pounds green beans, ends trimmed and cut in half
- 1 tbsp extra-virgin olive oil
- 3 tbsp butter
- 2 large garlic cloves, finely chopped
- 1 tsp red pepper flakes
- 1 tbsp lemon zest
- Salt and freshly ground black pepper to taste
Step 1: Fill a large bowl with ice water and place it in the sink
Step 2: Fill a large pot with water, add a good amount of salt and bring to a boil.
Step 3: Once the water is boiling, add the green beans and blanch until bright green in color and slightly tender, approximately 2 minutes.
Step 4: Drain the beans in a large colander and place the colander, with the beans inside, into the ice water.
Step 5: Heat the oil and butter in a large skillet over medium heat. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds.
Step 6: Add the green beans to the skillet, mix them well, and continue to saute until cooked to your desired tenderness, about 5 minutes. Add the lemon zest, salt and pepper to taste and toss well.
