Black Bean Salad is a perfect summer food. Full of nutrients, filling and very refreshing.

Apart from Mexican food, it pairs great with veggie or meat burgers, chili and many other dishes.

INGREDIENTS:

1 can black beans
1 cup corn kernels
1 bell pepper, diced
2 plum tomatoes, diced
1 jalapeño, diced
½ avocado, diced
½ small red onion or shallot, diced (optional)
1 roasted red pepper, diced (optional)
¼ cup fresh cilantro
1 lime, juiced
1 tsp cumin
1 tsp chili powder
2 tbsp olive oil
salt and pepper, to taste



Step 1: Dice bell pepper, tomatoes, jalapeño, onion, roasted red pepper, cilantro and combine with beans and corn in a bowl.

Salad Recipe

Step 2: Add all the dressing ingredients and toss to combine. Generously season with salt and pepper. Refrigerate for at least an hour.

Step 3: Taste the salad, adjust the seasoning as needed, add diced avocado.

TIP: Add avocado at the end so it stays firm.

Step 4: Top with more cilantro, if desired.
