Nachos are a perfect finger food for any type of gathering, from sports events to pool parties to Cinco De Mayo. It is unbelievably easy to make, and with different topping options, it can be versatile enough to satisfy the pickiest eaters out there. It is a great snack, party appetizer or an easy weeknight meal.

Weeknight Dinner Recipe

The secret to keeping these loaded nachos firm and crispy is to bake the tortilla chips with shredded cheese first until cheese is melted before adding any other toppings. This ensures that chips do not get soggy once all the toppings are on.



INGREDIENTS:

1 bag of tortilla chips
1 ½ cup of shredded cheese
1 cup black beans, canned or pre-cooked
½ lb. ground beef, can substitute with shredded chicken
1 tbsp olive oil
½ cup hot water
1 tsp cumin
1 tsp chili powder
½ tsp coriander
salt and pepper to taste

TOPPINGS:

Shredded lettuce
Guacamole
Salsa
Red Cabbage
Pickled Jalapeños
Cilantro
Fresh Tomatoes, diced
Fresh Avocado, diced
Fresh Jalapeños, diced
Sour Cream



Step 1: Preheat the oven to 350⁰ F. While the oven is prewarming, heat the olive oil and brown the ground beef in a small frying pan.

Step 2: Once the meat is all brown, add the black beans, mix them all together and cook for a couple of minutes.

Step 3: Add water and all the seasonings: cumin, coriander, chili powder, salt, and pepper to the meat and beans mixture. Simmer until liquid has almost completely evaporated.

Step 4: While the meat is cooking, layer all the chips in the oven-safe platter, sprinkle with cheese (approximately half a cup), and bake until the cheese is melted and tortilla chips are getting a little brownish. This step keeps chips firm and not soggy when all the other toppings are added.

Step 5: Top the tortillas with beef and bean mixture and remaining shredded cheese. Place back in the oven until cheese is melted.

Step 6: This is where the fun begins. Add any or all the toppings you’d like and serve immediately.
